Parkin Recipe by Jane Merritt – Old Dairy Baking
Large Aga Roasting tin
Simmering oven for 1- 1.5 hrs
Ingredients
8oz butter
8oz sugar Melt gently in a pan
6oz treacle
6oz syrup
16oz S.R.flour Sift into a large bowl
4tsp ground ginger
6oz med oatmeal
6oz rolled oats
4 eggs
Milk, if necessary
Method
Grease and line roasting tin
Melt butter, sugar, treacle and syrup in a pan over a low heat.
Sift flour and ginger into a large bowl and add oatmeal and porridge oats.
Stir in melted ingredients and beaten eggs. The mixture should be a stiff batter – it may be necessary to add some milk, if too stiff.
Pour into the prepared tin and cook on the shelf towards the top of the roasting oven (170 C) for just over 1hr or until the top is just firm to the touch.
Cool on a wire tray. Wrap in foil and store in a cool dry place for about 1 week before cutting.
Parkin is delicious served with a slice of farmhouse cheese.
